BBQ Mushroom Skewers

Ingredients

400 g Mercer Swiss brown mushrooms

3 tbsp olive oil

3 tbsp soy sauce

4 garlic cloves, finely chopped

2 tsp fresh thyme, chopped

2 tbsp fresh parsley, chopped (plus extra for garnish)

1 tsp paprika

½ tsp black pepper

8 skewers

Method

  1. In a large bowl, prepare the marinade by mixing 2 tbsp olive oil, 2 tbsp soy sauce, garlic, thyme, parsley, paprika, and black pepper. Stir well to combine.
  2. Clean the mushrooms using a brush or kitchen paper, then cut them into halves or quarters, depending on their size. Place the mushrooms in the bowl with the marinade and toss until fully coated.
  3. Thread the marinated mushrooms onto skewers. Place the skewers on a preheated grill or BBQ and cook for 3–4 minutes per side, or until the mushrooms are tender and slightly charred.
  4. Brush the skewers with the remaining olive oil and soy sauce, then grill for an additional 1 minute for extra flavour.
  5. Transfer the mushroom skewers to a serving plate, sprinkle with fresh parsley, and enjoy these delicious grilled mushroom skewers!
