Mushroom Avocado Toast

Ingredients

200g Mercer swiss brown mushrooms 

1 Avocado 

2 Slices bread 

3 Garlic cloves 

1 Fresh lemon - for the juice 

2/3 tsp Extra virgin olive oil 

1 tbsp Balsamic or apple cider vinegar 

2 tbsp Cress (optional) 

Salt and pepper to taste

Mushroom Avocado Toast

Method

  1. Preheat a skillet over high heat. Add oil and add minced garlic. After approximately one minute, incorporate sliced mushrooms. Gently toss in the oil using a spatula. Cover the skillet using a lid. Let the mushrooms cook undisturbed for 1-3 minutes until they achieve a light golden brown color. 
  2. Reduce the heat to low, uncover the skillet, and season the mushrooms with salt and pepper. Toss them lightly. Turn off the heat, add vinegar or balsamic, and toss again. Increase the heat to high briefly for burning off excess liquid. 
  3. Turn off the heat and let them rest. Toast the bread and spread mashed ripe avocado onto it. Squeeze fresh lemon over the avocado. Top the avocado toast with the warm, seasoned mushrooms and a sprinkle of cress.
