Mushroom Garlic Spaghetti

Ingredients

400g spaghetti

400g Swiss brown Mercer Mushrooms, sliced

2 tbsp olive oil

6 garlic cloves, chopped

½ cup grated Parmesan cheese

2–3 tbsp fresh parsley, chopped

Salt and pepper, to taste

Mushroom Garlic Spaghetti

Method

  1. Cook the spaghetti according to the packet instructions. Once cooked, reserve ⅔ cup of pasta water, then drain the pasta
  2. Meanwhile, heat the olive oil in a large pan over medium heat. Add the mushrooms and cook for about 7 minutes, until tender. Stir in the garlic, salt, and pepper, and cook for another 2 minutes, until fragrant.
  3. Add the cooked pasta to the pan and toss well to combine with the mushroom and garlic mixture. Stir in the Parmesan cheese and a splash of the reserved pasta water.
  4. Mix everything together until the sauce forms and coats the pasta nicely. Stir through the fresh parsley, then serve immediately.
