Mushroom, Ham & Cheese Bagel

Ingredients

1 bagel

60g cooked ham

1 egg

100 g Swiss Brown Mercer Mushrooms, sliced

1 tbsp olive oil

1 tsp Fresh parsley 

1 tsp garlic powder (to taste)

Salt & pepper

Optional: a slice of cheese or grated cheese

    Mushroom, Ham & Cheese Bagel

    12 minutes
    Serves 1

    Method

    1. Heat a splash of olive oil in a pan over medium heat. Add the sliced mushrooms and cook for about 6 minutes, stirring occasionally, until golden. Add chopped parsley, garlic powder, and a pinch of salt, and cook for another minute. Set aside.
    2. In the same pan, lightly scramble the egg until just set. Season with salt and pepper to taste.
    3. Warm the bagel in the oven at 150°C for about 5 minutes, or slice it in half and toast it.
    4. Layer the ham, scrambled egg, mushrooms, and a slice of cheese (if using) on one half of the bagel. Top with the other half. Enjoy warm!
