Portobello Pizzas

Ingredients

4 large Mercer portobello mushrooms

2 tbsp olive oil

2 garlic cloves, minced

1 tsp dried oregano

4 tbsp tomato purée

8 cherry tomatoes, sliced

100 g mozzarella cheese, grated

Method

  1. Preheat the oven to 200°C and lightly grease a baking tray.
  2. Place the portobello mushrooms stem-side down on the tray and bake for 5 minutes.
  3. Meanwhile, mix the olive oil, garlic, and oregano in a small bowl.
  4. Remove the mushrooms from the oven and turn them over, stem-side up. Spread each with tomato purée, top with cherry tomato slices, and drizzle over the garlic oil mixture. Sprinkle with mozzarella and add any extra toppings you like.
  5. Bake for about 10 minutes, until the cheese has melted and is lightly golden.
  6. Take them out of the oven, sprinkle with extra oregano, and enjoy!
