Vegetarian Portobello Burger

Ingredients

4 hamburger buns

4 large portobellos

2 tomatoes

50g rocket (arugula)

1 avocado

1 red onion

1 red capsicum (bell pepper)

2 tbsp Sesame seeds

Plant-based bacon

1/4 cup balsamic vinegar

1/4 cup olive oil

1 tsp dried oregano

2 large garlic cloves, minced

1/2 tsp smoked paprika

1 tsp dried basil

Vegetarian Portobello Burger

Method

  1. In a medium bowl, whisk together the balsamic vinegar, olive oil, garlic, and spices to make the marinade. Preheat the BBQ grill.
  2. Brush the portobellos generously with the marinade, ensuring they are evenly coated. Place them hollow side down on the grill. Cook for about 5 minutes on each side, or until the portobellos are tender, but take care not to burn them.
  3. While the portobellos are grilling, slice the vegetables. Cut the tomatoes, avocado, and red onion into thin slices. Slice the capsicum into thin strips and grill them on the BBQ or sauté them in a pan on the BBQ. Cook the plant-based bacon until crispy.
  4. Once the portobellos are ready, assemble your burgers. Start with the bottom half of the hamburger bun, layer on the rocket, tomato slices, grilled portobello, avocado slices, red onion, grilled capsicum, and crispy plant-based bacon.Sprinkle with sesame seeds and add your preferred sauce, such as aioli. Top with the other half of the bun.
