Veggie Fried Rice with Mushrooms

Ingredients

2 cups cooked rice 

200g white button mushrooms, sliced

2 spring onions, finely sliced

1 small onion, diced

1 carrot, finely chopped

1 cup frozen green peas

2 tbsp soy sauce (or more to taste)

1 tbsp sesame oil 

1–2 tbsp sesame seeds

Salt & pepper, to taste

Veggie Fried Rice with Mushrooms

Serves 2

Method

  1. Cook the rice according to the packet instructions, or use cold leftover rice straight from the fridge.
  2. Prep your veggies and cook the frozen peas according to the instructions on the packet. Set aside.
  3. Heat the sesame oil in a large pan or wok over medium heat. Add the diced onion, mushrooms, and carrot, and sauté for about 5 minutes until softened and starting to colour.
  4. Stir through most of the spring onion (save the green tops for garnish) along with the cooked peas. Cook for another minute.
  5. Add the cooked rice, breaking up any clumps with a spatula. Stir-fry for a few minutes until everything is heated through and well combined.
  6. Drizzle over the soy sauce and season with salt and pepper to taste. Mix well.
  7. Finish with a sprinkle of sesame seeds and the remaining spring onion greens. Serve hot and enjoy!
