Walnut-Feta salade with Mushrooms

Ingredients

200g Mercer White Button Mushrooms 

100g Rocket Leaves 

½ Red Cabbage 

1 Clove Garlic 

50g Walnuts 

150g Feta 

1 tsp Oil 

2 tbsp Dressing of choice (e.g., Balsamic)

Method

  1. Heat oil in a wok over medium-high heat. Add minced garlic and sauté briefly until fragrant. Add sliced mushrooms to the wok and stir-fry for 3-5 minutes, or until the mushrooms are tender and lightly browned.
  2. In a large bowl, combine the sautéed mushrooms with crumbled feta, walnuts, and thinly sliced red cabbage. Add rocket leaves to the bowl. Pour the dressing of your choice over the salad and gently toss everything together. Serve the salad immediately and enjoy the delightful combination of flavors!
